  • The prison bakery, originally located in the basement of the Dining Hall and later moved to the Multipurpose Building, provided baked goods for residents' and guards' meals. "In the bakery, they made anything Albertson's would ever bake-- rolls, pound cakes, frosted cakes, etc." In the 1950s, the prison bought used ovens from Albertson's, increasing the amount of baked goods and providing vocational training.
  • According to the prison newspaper The Clock, the bakery used 1,300 pounds of flour, 60 dozen eggs, hundreds of pounds of sugar, milk, and lard, and turned out 245 dozen assorted pastries per week. In the 60s, the bakery produced 2,000 donuts and 2,100 maple bars per month.
